Slow Rise Bakery is run by Johnnie and Lexi Lightning. We are self taught oven builders and bread bakers inspired by the artisanal and Slow Food philosophies of providing locally produced foodstuffs that feature primarily organic ingredients and traditional cooking methods.
Our name Slow Rise comes from the long, slow fermentation period our breads require to develop their best flavour and texture. We bake in small quantities in our 2 wood-fired brick ovens and most of our breads are made from natural yeast cultures also known as sourdough starters. We do not use dough improvers, preservatives, artificial flavours or colourings in any of our products. We use only organic flours and grains.
